Aviyal-Kerala cuisine

Aviyal is a very tasty and nutritious side dish recipe from Kerala. It is one of the main ingredients in Onam sadhya, the traditional vegetarian feast. It is prepared by mixed vegetables except the mushy and pulpy ones like ladies finger and tomato. Vegetables used will be listed in the ingredients below. It is a wonderful side dish for plain rice along with sambar.
Ingredients
1.Vegetables (Each cut into the thin 2-inch piece)
a) Raw banana - 1No
b) Drumstick -1No
c) Potato-1No
d) Green beans- 4No
e) Carrot- 1No
f)  Elephant foot yam-100g
g) Ash gourd-100g
(You can skip and add vegetables based on the availability)
2. Grated coconut-1 Cup
3. Shallots-5 No
4. Cumin seeds-1/2 teaspoon
5. Green chillies-4 No(slice lengthwise)
6. Ginger-A little(Optional)
7. Garlic - A little(Optional)
8. Turmeric-1/2 tsp
9. Tamarind water-As per required
10. water- sufficient to cook vegetables
11. Curry leaves-2 Springs
12. Coconut oil- 2 Tsp
13. Salt- As per taste.
Steps
1)wash the vegetables
2)Putt the vegetables in a pressure cooker and add water, salt, turmeric .Close the lid
3)Cook the vegetables till 1 whistle. (better to cook drumstick separately since they will take less cooking time).Drain the water and keep it aside.
4) Grind grated coconut, shallots, green chillies, cumin seeds, ginger and garlic together and make a coarse paste. Add a little water while grinding.
5)Add tamarind water as per taste. Aviyal should have only moderate tanginess.
6) Add coconut paste to the cooked vegetable
7)Mix well and cook it for two minutes
8)Check the salt and add if required.
9)Finish the dish by adding fresh curry leaves and coconut oil.
