Palada Pradhaman


Palada pradhaman is a type of payasam in Kerala, which is made of main ingredients like rice, ada, and milk. It is very delicious in taste. It is a recipe which is unique to Kerala. Traditional palada pradhaman takes hours of hard work to make. But, we can make it a little bit easier at home, however, the traditional one is the best, without any doubt. Though we can recreate it by using some smart tricks.
Ingredients:
1) Palada - 100 g
2) Full fat milk - 1 &1/2 litre
3) Water - 1 litre
4) Sugar- 10tbsp
5) Salt-A pinch
Making it includes 3 processes:
1) Making the payasam pink in colour: The hardest part of making palada pradhaman is turning the payasam light pink in colour. It happens due to caramelization of sugar added with the milk
2) Cooking palada 
3) Mixing milk and palada together
Steps:
1) In a pressure cooker, add milk and sugar and bring it to a boil.
2) When boiling happens, turn the gas into law flame and close the cooker with the whistle on the lid. (This is to make the payasam pink)
3) Let the cooker be on the low flame for 1 hour. (Don't worry about the whistling)
4) In a pan, add water and bring it to boil. Then, add palada into it.
5) Cook until it's done. If palada is completely cooked, we can mash it by keeping it between thumb and index finger.
6) When all the pressure is gone, open the lid of the pressure cooker. You can see a pink colour to the milk.
7) Add the cooked palada into the milk in the cooker.
8) Add a little salt 
9) Add sugar, if it is needed.
10) Stir continuously until the payasam gets a little thicker. (It took me 30 minutes in low to medium flame to get the desired consistency)
11) After getting the desired consistency, turn of the flame.
